Recipe of the Day – Courgette, Lemon & Chilli Pasta – so easy a kid can make it!

There has been much in the press lately about obesity, food scares etc and much blame has been placed at the door of children being unable to cook.  There was a piece in The Times last Saturday (behind the paywall – sorry!) which highlighted the 15 dishes all children should be able to cook.  Well, my son is ten and he rarely cooks.  In fact only recently has he even started to enjoy food….. On top of that we have an Aga which isn’t exactly the most child friendly appliance… But I thought we’d have a go!

I chose a recipe that is easy and that I know he would actually eat (on top of which it’s healthy and nutritious!)  We went to the cookshop and bought his own peeler – it’s a very smart one with a gingham check!

We adapted it a bit – he’s not too fond of chilli so we only put the merest smidgeon in!  Also we used half courgette and half carrot to add more flavour and colour.  We peeled the courgette and carrot in ribbons which looks prettier!

We used a mix of yellow and green tagliatelle as the green contains spinach!  More nutritious content!

My son gave the final dish 4 stars out of 5 for ease of preparation and tastiness! Now we are thinking about what to do next…..!  We’ll keep you posted!
